Apple Cake

This is so easy (trust me, I’m not an experienced baker) and everyone at our Rosh Hashanah table wanted me to do it again. The cake itself tastes like challah (it is very eggy.)

Hat tip to Food 52. I revised their recipe by adding cinnamon. What do you think? Should an apple cake be made without cinnamon?

Barbara’s Apple Cake

Ingredients

    APPLE MIXTURE:

  1. 4 apples (you can use a mix of your favorites)
  2. juice of one lemon (to prevent browning)
  3. 2 TB margarine (or butter)
  4. 2 TB sugar
  5. 1/2 tsp cinnamon
  6. CAKE BATTER:

  7. 1 cup flour
  8. 3/4 cup sugar
  9. 2 eggs
  10. 1/2 cup vegetable oil
  11. 1 tsp baking powder
  12. 1 tsp vanilla
  13. 1/2 tsp cinnamon
  14. 3 TB brown sugar

 

Instructions

  1. Preheat oven to 350º F. Grease and flour a square 9″ pan.
  2. Peel and core apples, and cut into slices. Pour lemon juice over the slices so they don’t brown.
  3. Heat margarine in pan over low heat and add apples and 2TB sugar and cinnamon. Stir until apples soft, about 15 minutes.
  4. Mix ingredients for batter (except brown sugar.)
  5. Add half the warm apples to the batter. Mix and pour into pan.
  6. Arrange the remaining apples on top and sprinkle with the brown sugar and a dash of cinnamon.
  7. Cook for one hour. Cool in pan and serve.
