Potato Latke Muffins

These low-fat latkes are baked in muffin tins (not fried) making them a healthy treat.  And for those counting WeightWatchers Points Plus, each yummy latke muffin is only 1  PP.

Potato Latke Muffins

Ingredients:

  1. 4 large baking potatoes
  2. 2 onions
  3. 2 egg whites
  4. 1 TBS flour
  5. 1/4 tsp baking powder
  6. 1 tsp salt
  7. 1/2 tsp pepper
  8. olive oil spray

Instructions:

  1. Preheat the oven to 375 degrees.
  2. Wash the potatoes, but leave the skins on.
  3. Shred the potatoes using a medium-fine shredder blade in a Cuisinart.
  4. Chop the onions using the chopping blade.
  5. In a separate bowl, beat the egg whites, flour, baking powder, salt and pepper, until smooth.
  6. Blend all the ingredients together.
  7. Spray two muffin tins (for a total of 24 muffins) with olive oil spray.
  8. Spoon the latke mixture into the tins.
  9. Bake for 20 minutes.
  10. Remove the tins and spray the top of the latkes with oil oil.
  11. Return to oven for another 20 minutes.
  12. Serve immediately, or refrigerate in tins and reheat for 15 minutes before serving.
